Winnimere is a seasonal cheese crafted from raw cow’s milk, produced at Jasper Hill Farm in Vermont. The cheese has a unique profile, characterized by its creamy texture and rich flavors reminiscent of sweet cream, bacon, and spruce. It is inspired by traditional Jura Mountain cheeses like Vacherin Mont dOr, and is made only during the winter months when the cows are fed hay.This cheese is wrapped in strips of spruce cambium, which adds a distinctive earthy quality to its flavor. Winnimere undergoes a 60-day aging process, during which it is washed in a cultured salt brine to develop its rind. When fully matured, it has a spoonably soft texture, making it perfect for sharing.Winnimere pairs excellently with smoky red wines or porter-style beers, and it’s recommended to serve it at room temperature for optimal flavor.
